I don’t think there is anything better than crispy potatoes that are seasoned to perfection. These Hasselback potatoes will become a family favorite in an instant!

I absolutely love recipes that are easy and quick! And these potatoes do not disappoint. All you will need is your handy air fryer, a cutting board and knife. How amazing is that?

Ingredient Notes

  • Potatoes – Russet potatoes fry amazingly, but if you can’t find some, Yukon golds are fine as well.
  • Olive oil –  Substitute sunflower, safflower, or avocado oil. Don’t shy away from properly coating the potatoes.
  • Seasoning – I used a simple combination of salt and pepper and added a nice twist with the Italian Seasoning and garlic powder. Everyone has different taste needs, so feel free to use your favorite seasonings.

How To Make Hasselback Potatoes In The Air Fryer

  1. Slice your potatoes: Place a potato on a cutting board between two chopsticks or skewers. Slice the potato into ¼ inch slices, but do not slide the knife all the way down, the chop sticks should prevent you from doing that. Repeat with remaining potatoes.
  2. Prep the seasoning: In a small bowl combine the olive oil, Italian seasoning, garlic powder, salt and pepper.
  3. Brush the potatoes: Place the potatoes at the bottom of your air fryer basket and brush generously with the olive oil mixture all around.
  4. Cook the potatoes: Cook at 380°F for 15 to 20 minutes or until fork tender.

Frequently Asked Questions

Why are they called Hasselback potatoes?

Hasselback potatoes got their name from the Swedish restaurant where they were invented and popularized. The restaurant was called Hasselbacken and the these potatoes were first served there in 1953.

Should you soak potatoes in water before roasting?

The additional step of allowing the peeled, washed and cut potatoes to soak in cold water removes excess potato starch from the outside. This will help with the crisping up of the potatoes when they bake or roast. Soaking the potatoes in cold water also prevents the potatoes from browning too fast when cooking.

What type of potatoes would be best to use?

Russet potatoes are great for frying and will brown beautifully in your air fryer. My second favorite potatoes to use for this are Yukon golds.

Expert Notes

  1. Don’t overcrowd the air fryer basket and don’t stack the potatoes on top of each other. If you have a small basket you might only be able to fit 2 potatoes in it at a time. The cooking time will vary depending on the size of your potatoes.
  2. You can peel the potatoes or simply leave them peeled and wash them well before cutting as per instructions.

Leftovers

Store leftover potatoes in an airtight container in the fridge for up to 3 days.

To get that crispy crunch back, simply place your leftover fries in a single layer in your air fryer. Turn on the air fryer at 350°F and cook for about 3-4 minutes, depending on how crispy you want them.

  • ½ teaspoon garlic powder
  • ½ teaspoon salt or to taste
