- 1 tablespoon butter
- 1 pound boneless skinless chicken thighs cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 3 cloves garlic minced
- 1 cup long-grain white rice uncooked
- 2 cups chicken broth low sodium
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
- ½ cup Parmesan cheese grated

In a large skillet over medium heat, melt butter. Season the chicken with salt, pepper, and paprika. Add to the skillet and cook until browned, about 5 minutes.
