Pomegranate Cider Mimosas – a restaurant worthy creation if I do say so myself. We’re combining sweet yet tart ruby red pomegranate juice with velvety champagne, spiced apple cider, all held in a caramel rimmed glass – delish!

Culinary creations don’t end when it comes to drinks, in fact they’re a perfect way to get creative with some classic flavors and textures. I’m talking fresh apple cider, pomegranate juice, champagne in a salted caramel rimmed glass. It’s good, trust me!

I can slug back mimosas like the best of them, don’t even take me to a bottomless brunch! But sometimes I get a little bored with the standard OJ and bubbly, sometimes I need a little more complexity to my bevvies.

And that’s where this mimosa comes in.

Mimosa Made Magical

First we’re taking pomegranate juice, which doesn’t get enough love as far as I’m concerned (it makes a mean mimosa as well), and combining it with apple cider for that depth and spice. I of course added champagne and topped it all off with a caramel rim sprinkled with flaked sea salt – this is the definition of treat yourself folks.

Ingredients

  • Champagne – We’re using an entire bottle of the bubbly stuff today – be sure to keep it nice and chilled in the fridge till you’re ready to use it!
  • Juice – Pick up some of that deep red pomegranate juice and some apple cider. Keep an eye on the sugar content of each since they both tend to be a bit sweet.
  • Caramel – You can grab a bottle from the store or you can whip up some of my super easy 1 Ingredient Caramel Sauce. This addition is totally optional but it really sets these mimosas off!

How To Make Pomegranate Cider Mimosas

  1. Rim each champagne flute with a teaspoon of sauce caramel. Garnish with salt flakes.
  2. Combine the mimosas: Add 2 tbsp of pomegranate juice to the bottom of the champagne flute. Add another 2 tbsp of apple cider. Fill it up with champagne and serve! Enjoy!

Champagne Not An Option?

Sometimes the real bubbles can be a bit too expensive or tough to find. This drink will taste totally fine with whatever prosecco you can get your hands on!

Booze Free Mimosas

You can certainly ax the booze if you’re not on speaking terms with the hard stuff! Just replace the champagne with sparkling apple juice or soda water.

What Brunch Pairs Best With Pomegranate Mimosas?

These were made to be paired with something rich and delicious, or you can just sip them all on their own – I won’t judge.

Can I Make Mimosas Ahead?

Sadly I wouldn’t recommend it, your champagne will go flat long before you get a chance to serve it if you make this drink more than an hour in advance. It’s quick recipe to throw together though so just give yourself a bit of time day of!

Ingredients

  • 1 bottle champagne chilled
  • 1/3 cup pomegranate juice
  • 1/3 cup apple cider
  • 2 teaspoon caramel sauce for rim
US Customary – Metric

Instructions

  • Rim each champagne flute with a teaspoon of sauce caramel. Garnish with salt flakes.
  • Add 2 tbsp of pomegranate juice to the bottom of the champagne flute. Add another 2 tbsp of apple cider. Fill it up with champagne and serve! Enjoy!
