Trick or treat yourself to this Halloween Poke Cake! Using boxed cake, orange jello, and the most incredible whipped cream cheese frosting, this delicious cake is so easy to make it’s almost scary.

Alright, guys and ghouls! This recipe is the perfect addition for your Halloween party spread, or to contribute for your Halloween potluck. The best part about this cake? It’s so easy!

This is a kid-friendly recipe that your whole family will have fun making.

Another thing I love about this recipe is how versatile it is. You can use any color of jello that you want- green or purple slime, red blood, you name it! We used an edible food spray to give the frosting some spooky flair, but you can always mix some regular food coloring into your frosting.

When you make this cake, follow the package instructions for baking your boxed cake. Ours called for 1 cup of milk, 1/2 cup of vegetable oil, and 3 eggs. If yours calls for different ingredients, then use those instead. You can use any light type of cake mix- white cake, birthday cake; whatever is most convenient for you! One thing I can guarantee is that you’ll have the most spooktacular Halloween with this fun recipe.

Halloween Poke Cake

Trick or treat yourself to this Halloween Poke Cake! Using boxed cake, orange jello, and the most incredible whipped cream cheese frosting, this delicious cake is so easy to make it’s almost scary.

Ingredients

For the cake

  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 3 eggs
  • 2 packages orange jello
  • 1 cup boiling water
  • 2 cups ice

For the whipped cream cheese frosting

  • 8 ounce cream cheese
  • 2 cups icing sugar
  • 3 cups whipped cream
  • black and orange edible food spray (optional)

Instructions

  • Make the cake according to the package instructions and bake in a 9×13 pan.
  • While the cake bakes, make the jello. Whisk the jello mix and boiling water in a bowl well until the mixture has completely dissolved. Add the ice, and whisk well for 1-2 minutes, or until the mixture is cold. Remove any excess ice.
  • Allow the cake to cool completely. Using the end of a wooden spoon, poke holes about 1″ apart from each other all over the cake. Pour the jello evenly over the cake and set aside in the fridge. 
  • Beat the cream cheese until soft. Add the icing sugar, and beat until completely smooth. Gently fold in the whipped cream until everything is well combined.
  • Using a piping bag, cover the entire top of the cake with frosting. Finish by spraying with black and orange edible food spray.

Tips & Notes:

You can use regular food coloring if you prefer. Split the frosting in half in two separate bowls and mix the colors into the frosting before piping onto the cake.
You can use white, vanilla, or birthday cake mix if that’s more convenient for you. 
Our cake mix called for 1 cup of milk, 1/2 cup of oil, and 3 eggs. Follow the directions on your boxed cake if it differs from ours.
