Baked Oatmeal – A classic breakfast transformed into grab-n-go form. Made from scratch oatmeal is baked to perfection and served warm with maple syrup and mixed berries. This healthy breakfast requires only a handful of ingredients and minimal prep!

This baked oatmeal recipe is loaded with a handful of simple, wholesome, good for you ingredients – you can’t go wrong with oats, maple syrup and mixed berries! Transforming the classic, stick to your ribs oatmeal breakfast into a baked delight.

It’s hard to find a variety of healthy breakfast options that are easy and delicious, but this baked oatmeal checks all the boxes. Highly adaptable, this recipe can be readily changed to incorporate your favourite ingredients into one awesome breakfast bake!

The benefits of oats/oatmeal

Oats are one of the healthiest grains on the planet! They’re gluten-free, whole grain, and a great source of important vitamins, minerals, fiber and antioxidants. Here is a list of why oats/oatmeal should be your breakfast of choice!

  • Oats promote healthy gut bacteria and increase the feeling of fullness (you won’t need to eat as much to feel full) which may help with weight loss.
  • They contain many powerful antioxidants that have anti-inflammatory effects and may help lower blood pressure.
  • Oats are rich in carbs and fiber, but also higher in protein and fat than most other grains. They are also loaded with vitamins such as:
    • Manganese
    • Phosphorus
    • Magnesium
    • Copper
    • Iron
    • Zinc
    • Folate
    • Vitamin B1 (thiamin)
    • Vitamin B5 (pantothenic acid)
  • Studies indicate that oats can help reduce constipation in elderly individuals, significantly reducing the need to use laxatives.

Let’s get started in turning this super grain into an easy, portable breakfast!

Ingredients

  • Milk – Use your preference, dairy or non-dairy!
  • Eggs – Large.
  • Maple Syrup – Substitute with honey or agave.
  • Butter – I used unsalted, melted.
  • Vanilla Extract – Substitute with maple syrup.
  • Cinnamon – Ground.
  • Baking Powder
  • Salt
  • Oats – Rolled oats, or quick oats will do the trick!
  • Fruit – I used mixed berries, fresh or frozen will work.

How to make baked oatmeal

  1. Prep Baking Pan – Spray a 9×9-inch or a 8×8-inch baking pan with cooking spray.
  2. Combine Ingredients – Add all the ingredients to a large bowl, excluding the mixed berries, and whisk them until well incorporated. Fold in the mixed berries with a spatula.
  3. Bake – Pour the mixture into the prepared baking pan and transfer to the preheated oven (middle rack). Bake for 35 to 40 minutes or until the center has set.
  4. Cool & Serve – Let it cool for 10 minutes, then cut into squares and serve warm with additional maple syrup and fresh fruit or nuts.

Note: Do not make the oatmeal batter ahead of time – The oats will soak up all the liquid! Make sure to bake right away.

How to serve

Once your baked oatmeal has cooled and you have cut it, I like to top it with some more maple syrup to bring out the flavors from the square itself and then sprinkle fresh berries over top. You can choose a variety of different toppings and additives for your baked oatmeal bars, try these!

Toppings/Additions

  • Fresh/Frozen Berries – Raspberries, blueberries, strawberries and blackberries!
  • Fruit – Peaches, Apples, Banana
  • Chia Seeds
  • Nuts – Almonds, Walnuts, Pecans, Cashews
  • Agave or Honey
  • Greek Yogurt
  • Dried Cranberries or Raisins
  • Brown Sugar
  • Substitute Coconut Milk for Milk
  • Chocolate Chips
  • Cinnamon

How to store leftover baked oatmeal

This recipe is great because you can bake this ahead of time and reheat it for a quick breakfast throughout the week!

Store your baked oatmeal bar in the fridge, sealed tightly for up to a week!

Freezing

After your baked oatmeal has cooled, cover tightly and freeze for up to 3 months. Thaw in the refrigerator or at room temperature when ready to serve.

Ingredients

  • 1¾ cups milk
  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup butter unsalted, melted
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon ground
  • ¼ teaspoon salt
  • 3 cups rolled oats or quick oats
  • ½ cup mixed berries fresh or frozen
US Customary – Metric

Instructions

  • Preheat the oven to 350 F°. Spray a 9×9-inch or a 8×8-inch baking pan with cooking spray.
