A delicious Peach Cobbler made from scratch. Fresh, juicy peaches covered in a simple soft rise-to-the-top topping. The ideal summer dessert, served with a scoop of vanilla ice cream of course!

This Peach Cobbler is the ultimate summer comfort food dessert. There’s nothing like fresh, juicy peaches smothered in a delicious batter and baked to perfection. Made with a just a handful of simple ingredients, this yummy dessert is easy as pie, or should I say, easy as cobbler, to throw together!

The juices from the peaches bubble up into the pastry as it bakes, forming little pockets of deliciousness and gives it’s signature pockmarked appearance. There are many varieties of cobblers to pick from, I chose to go the batter route for this cobbler. It holds together so well and tastes amazing! Have you grabbed your peaches yet? What is a cobbler?

A cobbler is a dish that can either contain a fruit or savory filling! It is typically poured into a large baking dish or skillet and covered with a batter, biscuit, or dumpling topping before being baked to bubbly perfection.

Ingredients

  • Peaches – I used fresh peaches, sliced. You can use canned peaches, just make sure to drain all the juices. Keep in mind, when using canned fruits your dessert may end up more watery.
  • Sugar – We will be using both Brown Sugar and regular Granulated Sugar.
  • Cinnamon – Ground.
  • Lemon Juice – Freshly squeezed!
  • Cornstarch – Helps bind everything together.
  • Salt – To taste.
  • Flour – I used trusty all purpose.
  • Baking Powder – A must.
  • Butter – Cold and cubed!
  • Milk – Any milk will work, use your preference – dairy or non dairy.

How to make peach cobbler

  1. Preheat Oven: Preheat the oven to 425F.
  2. Make Peach Mixture: Mix the peaches, brown sugar, cinnamon, lemon juice, cornstarch, and 1/8 tsp salt in a large bowl. Pour the peach mixture into a 9×13″ baking dish and bake for 10 minutes.
  3. Make the Batter: Whisk the flour, baking powder, sugar, and salt in a bowl. Whisk in the milk.
  4. Assemble: Add the cubed butter to a 9×13-inch baking sheet, spread throughout. Place it in the oven while it preheats and until the butter melts. Pour the batter evenly over the bottom. Pour the peach mixture evenly over the batter. Transfer the baking dish back to the oven and bake for 35-45 minutes, or until the top is golden brown.

Cobbler, crumble or crisp? HELP!

In the baking world, there are SO many varieties of desserts and baked goods, making it confusing. Trust me, you’re not alone! After testing and baking almost too often (tough job, I know) I’m here to help.

COBBLER: As mentioned earlier, a cobbler is a deep-dish baked fruit dessert with a thick batter, biscuit, dumpling or pie dough topping. It’s a very loose dessert term, I know.

CRUMBLE & CRISP: The crumble and crisp (like the ever popular and one of my favorites, apple crisp) are more similar in comparison. They both contain fresh fruit with a streusel-like topping that gets baked until the fruit is cooked.

The main difference between the two, is in the streusel topping: crisps would contain oats and crumbles would not. The oats in the topping will crisp up as the dessert bakes, giving it the name. A crumble is strictly a streusel-like combination of flour, sugar and butter.

Regardless of the name, they’re all delicious!

How to serve

I think it goes without saying that it is absolutely necessary to serve this peach cobbler warm, with a scoop of vanilla ice cream – it’s like heaven on a plate.

This dessert can be served as either a messy, throw on a plate and devour type deal or you can dress it up with a little powdered sugar, maybe add a few fresh raspberries and slivered almonds to the plate – bam, a fancy dessert you can serve to guests.

Can I use other fruit in my cobbler?

You can use any fruit your heart desires! Try mixing different types of fruit and berries to really give you some creative combinations! Some excellent cobbler options to try:

  • Raspberries
  • Rhubarb
  • Blueberries
  • Apples
  • Plums
  • Blackberries
  • Strawberries
  • Cherries

By the way… they all pair excellently with vanilla ice cream 😉

Leftovers

Stored in an airtight container, your cobbler will last 4-5 days in the fridge.

Reheating leftover peach cobbler

Reheating in the microwave is the easiest method, but you can also reheat your cobbler in the oven at 325F for about 15 minutes, or until heated through!

Can I make this in advance?

Absolutely! If you want to make your cobbler in advance, bake ahead, let cool completely and store in the freezer for 6-8 months.

If you choose to keep it frozen in its original baking pan, make sure to wrap it with a layer of plastic wrap and a layer of foil to avoid any freezer burn. Let thaw overnight in the fridge before reheating. Keep in mind that the cobbler if frozen and defrosted, it will become a bit more watery.

Equipment

  • 9×13-inch Casserole Dish

Ingredients

  • 4 cups peaches sliced
  • 1/4 cup brown sugar packed
  • 1/4 teaspoon cinnamon ground
  • 1 tablespoon lemon juice
  • 2 teaspoon cornstarch

Batter

  • 1 cup all-purpose flour all purpose
  • 2 teaspoon baking powder
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup butter cold, cubed
US Customary – Metric

Instructions

  • Preheat the oven to 425F.
  • Mix the peaches, brown sugar, cinnamon, lemon juice, cornstarch in a large saucepan. Cook on medium heat for about 3 minutes, until the peaches soften a bit and become juicier.
  • Whisk the flour, baking powder, sugar, and salt in a bowl. Whisk in the milk.
  • Add the cubed butter to a 9×13-inch baking sheet, spread throught. Place it in the oven while it preheats until the butter melts. Pour the batter evenly over the bottom. Pour the peach mixture evenly over the batter. Transfer the baking dish back to the oven and bake for 35-45 minutes, or until the top is golden brown.
  • Serve warm with a scoop of vanilla ice cream.

  1. Stored in an airtight container, your cobbler will last 4-5 days in the fridge.
