Best Meatball Subs Recipe

If you haven’t already noticed, I’m a big fan of meatballs! In my house, we love them all from a big plate of classic Spaghetti and Meatballs to Buffalo Chicken Meatballs. There is no meatball dish that my family won’t happily gobble up and meatball subs are one of our favorites!

This iconic Italian American sandwich made with juicy ground beef meatballs, lots of melted cheese, and simple marinara sauce all plopped into a crusty hoagie roll is finger-licking good! But don’t let the idea of making homemade meatballs make you think that this sub takes a lot of time and effort. As I’ve said before, meatballs are one of the easiest and most delicious things to throw together.

You can serve these subs for lunch, dinner, or at your next party! It’s a recipe that the whole family will love including the kids. Meatball subs pair amazingly well with a side of my Crispy Fried Zucchini or Toasted Ravioli.

Meatballs

  • Ground Beef – I typically use lean ground beef but any type of ground meat will work including ground turkey. You can even mix in a bit of ground pork or Italian sausage.
  • Breadcrumbs – You can use regular or panko breadcrumbs. The most important thing is to use the right amount of breadcrumbs. 
  • Parmesan Cheese – Makes the meatballs a bit cheesy! Use freshly grated cheese for the best flavor and texture. Romano cheese works too!
  • Parsley – Definitely use chopped fresh parsley to add a layer of fresh herby flavor.
  • Egg – Needed to bind the meatballs together along with the breadcrumbs.
  • Garlic Powder – Blended into the ground meat to add yummy garlic flavor. You could also use fresh garlic, but in this case, garlic powder works better.
  • Seasonings – Salt and black pepper are used to season the meatballs.

Subs

  • Marinara Sauce – Any type of store-bought or homemade marinara sauce will do the trick. 
  • Hoagie Rolls – Meatball subs are traditionally made with hoagie rolls but any type of crusty bread, roll, or bun will work perfectly. 
  • Mozzarella Cheese – Melts perfectly to add the cheesy layer! Another good choice is provolone cheese. 

This is a really easy air fryer meatball recipe that comes together quickly and doesn’t require any fancy ingredients. You can even use store-bought marinara sauce if you like. 

Preheat The Air Fryer If Needed

Before you even start making meatballs you need to preheat your air fryer to 380°F (193°C). However, this step really depends on your particular air fryer. Some models require preheating and others don’t. So you will need to check your manufacturer’s guide. 

Make The Meatball Mixture

Now onto meatball making! First, add the ground beef, breadcrumbs, parmesan cheese, chopped parsley, egg, garlic powder, salt, and black pepper to a large bowl. Next, mix everything together with a wooden spoon or your hands until it’s incorporated really well. Then form the mixture into 12 to 16 meatballs that are all about the same size. 

Air Fry The Meatballs

After the meatballs are formed, put them in a single layer in the air fryer basket making sure that they are not touching. Then put the basket into the air fryer and cook the meatballs for 8 to 10 minutes, shaking the basket halfway through the cooking time. When the meatballs are done they should be cooked through and browned on all sides. 

Prep The Sauce And Rolls

While the meatballs are air frying, heat the marinara sauce in a medium saucepan over medium heat just until it begins to simmer. Then cut all the hoagie rolls lengthwise in half and put them on a baking sheet. Only cut the number of rolls you plan to serve right now. 

Assemble The Sandwiches

Let’s make some subs! Once the meatballs are ready, place 3 to 4 of them into each hoagie roll. Next, spoon some of the warm marinara sauce over the meatballs and then top them with lots of shredded mozzarella cheese.  

Melt The Cheese And Serve

To finish the subs, put the baking sheet into the oven and broil the sandwiches for 1 to 2 minutes or until the cheese is completely melted and bubbly. Then remove the meatball subs from the oven and let them cool for a bit before serving.

Can I Fry Or Bake The Meatballs?

Yes! To fry the meatballs, just heat some olive oil over medium heat in a large skillet and then fry them until they are well browned on all sides and fully cooked. But if you want to bake your meatballs, put them on a sheet pan lined with parchment paper and bake them at 400°F (204°C) for about 25 to 30 minutes.

Why Are My Homemade Meatballs Hard?

The key to tender meatballs has to do with the ratio of ingredients as well as not packing the meat too tightly together when forming them. If you add too many breadcrumbs the meatballs will turn out dry. Adding too much egg can cause them to be chewy or rubbery. And if you overwork the meat when forming them it can make the meatballs hard.

Storage

Already made meatball subs will keep in the refrigerator for about 2 to 3 days. You can just reheat them in the microwave for a few minutes on medium power or in the oven at 350°F (177°C). However, the leftover meatballs themselves will keep in the fridge for up to 4 days or in the freezer for up to 3 months in an airtight container or sealed freezer bag.

This is the ultimate sandwich for tuna lovers! With just the right amount of crunch, spices and melty cheese, this tuna melt could convert someone who despises them. This melt amplifies the traditional tuna sandwich with a combination of flavors that just work.

If you’ve never had a tuna melt before, you have been missing out! It’s the perfect lunch, snack, or even dinner when you’re looking for something comforting, quick and tasty! Made with a handful of kitchen staple ingredients, this melty sandwich couldn’t be any easier to make!

Ingredients

  • Tuna – Canned, drained.
  • Green Onion – Finely chopped.
  • Celery – Finely chopped.
  • Tarragon – Fresh tarragon (or parsley) chopped.
  • Mayonnaise – You can use your favourite or make your own using my homemade mayo recipe!
  • Mustard – I used dijon mustard, you can use your preference.
  • Lemon Juice – I prefer freshly squeezed, but use what you have!
  • Salt & Pepper – To taste.
  • Butter – Softened.
  • Bread – Sliced bread, any type will do!
  • Cheese – I used cheddar cheese, but again – use your preference!

How to make a tuna melt

  1. Preheat Oven – Preheat the oven to 375 F.
  2. Mix Ingredients – Mix the tuna, green onion, celery, tarragon, mayonnaise, dijon, lemon juice, salt, and pepper together in a bowl.
  3. Prep the Melt – Butter one side of 8 slices of bread. Place 4 of the slices, butter side down, onto a baking sheet. Divide the tuna mixture and spread over the slices of bread. Top with a slice of cheddar cheese, and then on of the remaining slices of bread, with the butter facing up.
  4. Make the Melt – Bake for 5-8 minutes, or until the cheese is melty and the bread is toasty.

How to serve

Tuna melts are one of my all time favourite lunches. The choice is up to you whether or not to serve it open faced or as more of typical “sandwich”. Serve with a side salad or just on its own and enjoy!

What can I add to my tuna melt?

If you want to add some oomph to your melt, try adding some avocado or chopped pickles to the tuna mixture or slice up a tomato and layer it under the cheese! To spice up your tuna melt, try adding your favourite hot sauce or some red pepper flakes into the mix.

Cucumber Sandwich Bites

Have you ever seen a recipe name that was so literal? Forget bread, it’s keto 2019 and we don’t need bread to make a delicious sandwich anymore! I hollowed out some cucumbers and made a little filling piled high with deli cut roast beef, turkey, pastrami, provolone cheese, and some of the best mayo I’ve ever had in my life.

So Why No Bread?

Jo, you may be wondering, what do you have against bread? Well nothing, I love bread – I love the smell and the taste, even how soft it is on the inside and that crispy crust on the out. But I’ve been trying to cut back on carbs this year for that keto lifestyle and prove to my taste buds that they will be just as happy with meals full of veggies and protein! I think I’ve succeeded with these cucumber bites!

Ingredients In Cucumber Sandwiches

  • Cucumbers – English cucumbers hollowed out to remove all the seeds.
  • Meat – I’m using meats sliced fresh from the deli, I highly recommend picking this up opposed to something prepackaged. Turkey, pastrami, and roast beef are all we need.
  • Cheese – I used nice thin slices of provolone today.
  • Condiments – Just mustard and Sir Kensington Mayo – the best I’ve ever tasted! However, feel free to use your favorite mayo.
  • Tomatoes – I used little halved cherry tomatoes for little bursts of concentrated tomato flavor.
  • Micro greens – For some crunch and bright bite, totally optional!
  • Seasoning – A little salt and a little pepper and your sandwich will be set right off!

How To Make Cucumber Sandwiches

  • Prepare the cucumbers: Cut your cucumbers lengthwise and scrape out the innards with a spoon, just scrape out the slightly goopey seeds while leaving the interior of the cucumber relatively intact. Season the cucumber lengths with salt and pepper.
  • Build the cucumber sandwiches: Dollop and spread the mayo on one half. Top this half with the sprouts and meat. Dollop and spread mustard on the other half and top with the halved tomatoes and provolone.
  • Finish the sandwiches: Carefully sandwich the two halves together and slice your sandwiches up into little cucumber medallions. Top with more pepper to taste and serve!

What Else Can I Put In Cucumber Sandwiches?

These so many ways you can play around with this recipe! The sky is the limit, the only restrictions you may find are what pairs well with cucumber and what can fit inside your little cucumber canoes!

  • Cream cheese sandwiches: Mix cream cheese, mayo, garlic and onion powder, and Worcestershire sauce in a bowl and spread into your little hollowed out cucumbers. Sandwich together and slice up to enjoy!
  • Smoked salmon: Layer cream cheese, red onion, capers, fresh dill, and smoked salmon into your cucumber halves and slice up.
  • Guacamole bacon bites: Spread guacamole, crispy bacon, and sliced turkey into your little cucumber canoes.
  • Greek style: Sliced turkey, hummus, feta, tomato, chopped olives all sandwiched into your cucumbers before being sliced up.

Different Ways To Make Cucumber Sandwiches

You can cut the cucumbers into thin but wide ribbons with a tool like this. You’ll want to wrap your filling up in the cucumber ribbon to make your own little mini wraps, perfect cut little finger food!

Cucumber sandwich party snacks

Peel your cucumbers whole before slicing into little coin sized slices. Stack your filling between 2 slices of cucumber like a mini sandwich for perfect party ready finger food.

Storing Leftover Cucumber Sandwiches

This dish stores quite well in the fridge in an airtight container for up to 3 – 4 days. I don’t recommend freezing this dish as the cucumber will lose a lot of its structural integrity as it thaws. So just make this dish a few days ahead at most or enjoy fresh!

  • 1 tablespoon poppy seeds
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar packed

Instructions

  • Preheat your oven to 350℉. Line a baking sheet with parchment paper.
  • Unroll the pizza dough onto the prepared baking sheet. Using a brush, brush the mayonnaise over the entire surface of the pizza dough to within 1/2 inch of the edges. 
  • Top with Swiss cheese slices over the mayonnaise, followed by the deli ham and finally pineapple.
  • Roll up jelly-roll style, starting with a long side, then pinch the seam to seal. Tuck the ends under and place it seam side down on the baking sheet.
  • In a small bowl whisk all the topping ingredients together then brush over the roll generously.
  • Bake for 25 to 30 minutes or until golden brown. Garnish with parsley if preferred.
  • Cool for 5 minutes before slicing. Serve warm.

Notes

  1. If you cannot find Pillsbury refrigerated pizza crust, use store-bought pizza dough, or make your own, using this recipe.
