This Corn Casserole recipe is so easy and one of my favorite side dishes to make for everything from a weeknight dinner to a holiday meal! This comfort food staple is made with just 5 ingredients and is so simple and versatile, you’ll love it!

This corn casserole is the epitome of comfort food. Creamy and rich with loads of corn, all baked inside a warm, tender cornbread batter. With just 5 simple ingredients we can create an epic southern staple the whole family will love.

Ingredient Notes

  • Cornbread Mix –  You can find this at your local grocery store!
  • Corn – We are going to be using both canned corn kernels (make sure it’s drained) and canned creamed corn or homemade creamed corn.
  • Butter – Unsalted and melted!
  • Sour Cream – Substitute with plain greek yogurt.

Optional:

  • Cheese – Cheddar cheese, shredded. Use this if you like your corn casserole cheesy.

How To Make Corn Casserole

  1. Preheat Oven: Preheat the oven to  350°F and grease a 9×13″ baking dish.
  2. Mix Ingredients: Mix all the ingredients together in a large mixing bowl. Pour the batter into the prepared baking dish and spread evenly with a spatula.
  3. Bake: Transfer the baking dish to the oven and bake for 45-50 minutes, or until browned and cooked all the way through.

What Is Corn Casserole?

Corn casserole is a staple in the south! Also referred to as “corn pudding” this cornbread based casserole is loaded with corn and is the perfect side dish if you’re looking for some good ol’ homemade comfort food!

Can I Make This In Advance?

Absolutely! You can make this casserole up to 2 days in advance. Mix up the casserole, place it in the baking dish and cover it with plastic wrap. When you are ready to bake it, remove it from the refrigerator about 30 minutes before you put it in the oven, and bake as instructed.

How To Serve

When you sit down to a comforting dinner, whether it be chicken cutlets, pot roast, pork chops or corned beef, this corn casserole is the perfect side dish to complete the meal!

Tips

  • Toss in some extra veggies such as peas or carrots!
  • Pour the casserole mixture into muffin tins for individual servings.
  • Add some jalapeno for a spicy corn casserole!

Storing Leftovers

Transfer leftover corn casserole to an airtight container or cover baking dish with plastic wrap and store in the fridge. Leftovers will keep for 4 days.

Freezing

If you want to freeze your leftover casserole, transfer to an airtight container and store in the freezer for up to 3 months.

  • 9×13-inch Casserole Dish

Ingredients

  • 8 ounce cornbread mix 1 package
  • 15 ounce corn kernels 1 can, drained
  • 15 ounce creamed corn 1 can
  • ½ cup butter unsalted, melted
  • 1 cup sour cream

Optional

  • 1 cup cheddar cheese shredded
