An Easy Bruschetta recipe made with simple, fresh ingredients. While the list of ingredients is short, the flavor is nothing but fantastic! The perfect starter to any Italian meal.

This Easy Bruschetta is made with a small list of beautiful, simple and fresh ingredients that come together to make a flavor packed appetizer. Bruschetta in Italian means “toasted bread with toppings.” and you had me at toasted bread, I lost focus after that.

The beauty of bruschetta is that you can truly make it as simple or elaborate as you want. Assemble some quickly for a snack or invest a little more in substantial toppings and make an entire meal out of it! I assure you that whoever you serve this bruschetta to, even if it’s just yourself, will be pleasantly surprised.

What is bruschetta?

Bruschetta is an antipasto (if you are unsure of what an antipasto is read below) from Italy, typically consisting of grilled bread rubbed with garlic and topped with olive oil and salt. There are a variety of forms in which bruschetta can be made, with toppings varying from tomatoes, vegetables, beans, cured meat, or cheese.

Antipasto

Antipasto is the traditional first course of a formal Italian meal. Typical ingredients of a traditional antipasto include: cured meats, olives, peperoncini, mushrooms, anchovies, artichoke hearts, various cheeses, pickled meats, and vegetables in oil or vinegar!

People often believe antipasto refers to a dish served before a pasta course – false. Literally, the word “antipasto” is derived from the Latin root “anti” meaning “before” and “pastus,” which means “meal.” Thus, the antipasto simply refers to the dish that precedes all the others to come.

Bruschetta

  • Tomatoes – I used Roma tomatoes, seeded and diced.
  • Basil – You want to use fresh basil, chopped
  • Garlic – Fresh is best! Minced.
  • Cheese – Parmesan cheese, grated.
  • Olive Oil – Extra virgin!
  • Vinegar – Balsamic vinegar is a must for this recipe.
  • Salt & Pepper – To taste.

To serve

  • Baguette – French baguette, sliced at a diagonal into 1/2″ slices.
  • Parmesan Cheese – grated
  • *Optional – Balsamic glaze – I highly recommend adding this!

How to make easy bruschetta

  1. Mix Ingredients – Mix all the bruschetta ingredients together in a medium-sized bowl.
  2. Prep Baguettes – Turn your oven’s broiler on. Line the baguette slices on a baking sheet and top each slice with parmesan cheese, spread evenly over the slices.
  3. Broil – Broil the baguette slices for 2-4 minutes, or until the cheese melts and browns slightly.
  4. Finish & Serve – Top each slice with bruschetta and serve.
  5. OPTIONAL: Drizzle balsamic glaze over the bruschetta after spooning it onto the baguette slices.

How to serve

Of course this is a classic appetizer for most parties, gatherings or get togethers, but this easy bruschetta is so good, I could eat it any time of the day! For a light lunch or easy snack, it’s perfection. You can serve it on toasted baguette slices (as stated above) crackers, zucchini chips, or if you love it as much as me, right out of the bowl!

I truly believe adding the extra drizzle of balsamic glaze amplifies this dish to the next level and brings all the flavors together! If you want to add a little extra bite to your bruschetta you can try adding some chopped onion as well.

Leftovers

Store leftover bruschetta in a shallow airtight container in your fridge for up to 3-4 days.

Ingredients

Bruschetta

  • 2 pounds Roma tomatoes seeded and diced
  • 1/2 cup fresh basil chopped
  • 2 cloves garlic minced
  • 1/4 cup parmesan cheese grated
  • 2 tablespoon olive oil extra virgin
  • 2 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper freshly ground

To serve

  • 1 French baguette sliced at a diagonal into 1/2" slices
  • parmesan cheese shredded
  • balsamic glaze optional
