It sounds like the meat may have been too cold, or the Instant Pot didn’t fully pressurize before cooking. Next time, let the meatloaf sit at room temp for 15-20 minutes before cooking, and make sure the Instant Pot is properly sealed. If needed, add an extra 5 minutes of cook time and check with a meat thermometer—it should be 160°F (71°C) in the center. Hope that helps

The first two times we made this it was fantastic and turned out great! I made it again today and when it came out the meat was not cooked through, it was still pink in the middle. I’m not sure if the meat was too cold or what happened..
