Sausage Tortellini Soup

I never turn down the opportunity to make a homemade soup, and you shouldn’t either! This Sausage Tortellini Soup is a simple hearty comfort food; tomato base, loaded with fresh veggies, Italian seasoning, and deliciously tender sausage. Need I say more?

You guys this soup is so easy it’s going to have you making it over and over again! Don’t worry about your lack of kitchen skills with this one, it’s so simple to prep and even more simple to put together – you’re going to be a soup-making-pro in no time!

It is definitely soup season around these parts of Canada and I love it because they are just too easy! This recipe is simple comfort food and is great for those busy weeknights when you need to put something together in a decent amount of time! This is one of those recipes that will wake you up from the inside out – I’m telling you, homemade soup is the best kind of soup!

What Is Tortellini?

Tortellini is ring shaped pasta and are sometimes described as belly button pasta. Yeah I know thats kind of weird and unappealing – so let’s move on! They originate in -you guessed it- Italy and are typically stuffed with a mix of meat or cheese, and served in some sort of broth!

Ingredients

Don’t forget detailed measurements and instructions are located on the printable recipe card at the bottom of this page!

  • Sausage – I used 1 lb today – you can use sweet or spicy, casings removed please!
  • Olive oil – For cooking the sausage.
  • Onion – 1 large onion will do the trick!
  • Carrot – I used 2 medium sized carrots, peeled and chooped.
  • Celery – 2 stalks will work, chopped.
  • Garlic – Fresh and minced. If using jarred, 1 1/2 teaspoons is equal to 1 fresh clove!
  • Tomato paste – Any brand will do.
  • Italian seasoning – It’s all about the flavor people!
  • Broth – I’m using chicken broth, and prefer the low sodium options.
  • Tomatoes – 1 large can of diced tomatoes is all that’s needed.
  • Tortellini – 1 package of cheese tortellini – you can use whichever variety you prefer!
  • Baby spinach – Stems off and full leaf – just as it comes!
  • Salt and pepper – For seasoning and to taste.

How To Make Sausage Tortellini Soup

  1. Cook sausage: In a large dutch oven, heat the olive oil over medium-high heat. Next, add the sausage and break it up with a spoon – cook for about 5 minutes, stirring occassionally.
  2. Build the soup: Add the onion, carrots, and celery and saute for about 5 minutes or until the veggies soften. Next, stir in the garlic and cook for another 30 seconds. Stir in the tomato paste, Italian seasoning, chicken broth, and diced tomatoes, and bring to a boil.
  3. Finish the soup: Add the tortellini and cook for about 5 minutes. Finally, add the spinach and cook for another minute – finishing with salt and pepper to taste!

What Else Can I Add To My Soup

There are numerous options available to you for ideas to add to your soup – you also don’t have to put sausage in it if that isn’t your thing. Here is a list to get you started:

  • Beef
  • Mushrooms
  • Beans
  • Basil
  • Oregano
  • Parsley
  • Chicken
  • Turkey
  • Kale
  • Corn
  • Rice

Can I Make This Soup In A Slow Cooker?

Oh heck yes! And here’s how you’re going to do it:

  1. Cook sausage: In a large dutch oven, heat the olive oil over medium-high heat. Next, add the sausage and break it up with a spoon – cook for about 5 minutes. Next add the onion and let saute for about 3 minutes. Finally add the garlic and let cook for about 30 seconds. Add the mixture to your crock pot.
  2. Build the soup: Add celery, carrots, tomato paste, Italian seasoning, chicken broth, and diced tomatoes. Leaving out the tortellini, spinach and salt and pepper.
  3. Let it cook: Set the crock pot for 3 – 4 hours on low. Finally, about 30 minutes prior to cooking finish time, add the tortellini, spinach, and salt and pepper stirring occasionally. And voila – slow cooker soup!

How To Serve

Most soups are pretty versatile you guys, so you can really serve it with whatever you want! I really love a homemade soup with homemade bread or fresh biscuits for dipping! If you’re looking for a few more options here are some ideas:

How To Store Leftovers

Sausage tortellini soup will last in the fridge up to 4 days when stored in an airtight, sealed container. You can definitely freeze this soup as well. Store in 1 large airtight container or in individual containers and it will last 2 – 3 months in the freezer.

Equipment

  • 6 Quart Dutch Oven

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage sweet or spicy, casings removed
  • 1 large onion chopped
  • 2 medium carrots peeled and chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 2 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth low sodium
  • 28 ounce diced tomatoes 1 large can
  • 9 ounce cheese tortellini 1 package
  • 3 cups baby spinach
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon pepper or to taste

Instructions

  • Heat the olive oil in a large Dutch oven over medium-hight heat. Add the sausage and break it up with a spoon. Cook for about 5 minutes.
  • Add the onion, carrots and celery and saute for about 5 minutes or until the onion and veggies soften. Stir in the garlic and cook for another 30 seconds.
  • Stir in the tomato paste then add the Italian seasoning. Add the chicken broth, diced tomatoes and bring to a boil.
  • Add the tortellini and cook for about 5 minutes or until cooked through. Stir in the spinach and cook for another 1 minute. Season with salt and pepper.
