Easy Apple Pie Baked Oatmeal Recipe

Imagine the creamy oatmeal that you grew up eating turned into baked squares. Got it? Well that my friends, is baked oatmeal. But if you’ve already tried my other Baked Oatmeal recipe then you know what I’m talking about and how good it is! But for those that don’t, it’s really yummy, super easy to make, and a great new take on all the best parts of classic oatmeal in a whole new way. 

And just like my other recipe, this Apple Pie Baked Oatmeal recipe is very similar in that you are going to make a simple batter composed of oats with some milk, eggs, baking powder, and a dash of sugar. Yet, in this one, I’ve left out the butter and added some flavors of an apple pie like fresh apples and cinnamon. I also folded in some pecans for some nutty texture and richness. It’s a delicious breakfast option that is oil-free, low-fat, and easy to make gluten-free by using the proper oats.

Not to mention, you can top the baked oatmeal with anything you like! Some of my favorites are maple syrup, yogurt, and fresh fruit! You can even transform it into a dessert with a scoop of vanilla ice cream!

  • Quick and Easy! You only need 10 minutes of prep time to whip this baked oatmeal together. Then once it’s in the oven it literally cooks itself. Easy as pie!
  • Healthy Breakfast! This is an oil-free recipe made from scratch using healthy wholesome ingredients. You can feel good about serving apple pie baked oatmeal to your family.  
  • Yummy and Affordable! Super delicious and easy on the wallet for meal prep. The simple batter only requires basic pantry ingredients and no fancy equipment to make.

Ingredients You’ll Need

  • Oats – You need old-fashioned rolled oats for this recipe. Quick oats will also work.
  • Baking Powder – Gives the baked oatmeal a little rise.
  • Cinnamon – A classic warm spice that blends wonderfully with apples.
  • Salt – A dash of salt helps to balance the sweetness.
  • Brown Sugar – Sweetens the apples beautifully with the natural bit of molasses in it.
  • Milk – Any type of milk will work including non-dairy varieties such as almond milk.
  • Eggs – They help to bind the oatmeal mixture.
  • Vanilla Extract – Use pure vanilla extract for the best flavor.
  • Apples – You can use any kind you like, but firmer apples tend to hold their shape better.
  • Pecans – Adds a nice crunch and richness to the baked oatmeal. Walnuts and almonds are other good options. 

How To Make Apple Pie Baked Oatmeal

This quick and easy breakfast recipe is so simple you’ll be making it every week! The batter literally takes just a few minutes to make! And it’s impossible to overmix it!

Preheat The Oven And Prep The Dish

To begin, you need to preheat your oven to 375°F (190°C) to get it ready for baking. Then spray a 9×13 inch casserole dish well with cooking spray. You can also grease it with oil.

Make The Batter

Now, you can start making the baked oatmeal! You need to mix the wet and dry ingredients separately. So first combine the rolled oats, baking powder, cinnamon, and salt together in a large bowl.

Next, whisk together the brown sugar, milk, eggs, and vanilla extract in a medium bowl.

Then add the wet ingredients to the oatmeal mixture and stir well. This is one batter you don’t have to worry about over-mixing! 

Add The Apples And Pecans

Once the batter is made, gently fold in the apples and chopped pecans just until incorporated. You want to do this carefully so you don’t break up the apples or mush them. The idea is to have chunks of apples.

Bake The Apple Pie Oatmeal

First, pour the oat mixture into the prepared baking dish. Then if you like, top with a few more pecans and a sprinkle of brown sugar. Now, put the baking dish into the oven and bake the oatmeal for about 45 minutes or until it’s golden brown on top. Then remove it from the oven and allow it to cool in the pan for 10 minutes before serving.

What Can I Add To The Baked Oatmeal?

This recipe is really versatile, which means it is easy to customize. You can use pears or berries in place of the apples. As well as, add different types of chopped nuts, chocolate chips, coconut, or any dried fruit you like. Also, any apple pie spices can be added. Some of my favorites are nutmeg, ginger, cloves, and cardamom. So feel free to be as creative as you like. Just keep in mind the ratios of the ingredients in the original recipe.

Is Baked Oatmeal Gluten Free?

Yes, if you use gluten-free oats then baked oatmeal is gluten-free. But you need to read the label on your oats to make sure that they are gluten-free as not all oats are.

How To Tell When Baked Oatmeal Is Done?

When baked oatmeal is ready it will be golden brown and slightly crisp on top. The edges will have also started pulling away from the sides of the pan and a knife inserted into the middle should come out with just a few wet crumbs.

Expert Tips

  1. Do not let the batter sit. You can’t make this batter ahead of time. The oats will soak up the moisture from the liquid. You need to make it and bake it right away.
  2. Fold in the apples. No, you can’t overmix the batter, but you can break up the apples. So gently blend them in so that they hold their shape.
  3. Let it cool. Wait the full 10 minutes before cutting into the apple pie baked oatmeal. It needs a few minutes to both cool and set.

Storage

Leftover apple baked oatmeal will keep in the fridge for up to 4 days when stored in an airtight container. If you’d like to warm it, I recommend putting it in the oven at 300°F (150°C) for about 5 to 10 minutes or until warm. You can also put it in the microwave on medium power for a few minutes.

It’s also possible to freeze baked oatmeal for about 3 months if you wrap it really well in plastic wrap. Then just allow it to thaw out at room temperature or in the fridge for a few hours before eating or reheating.

  • 9×13-inch Casserole Dish

Ingredients

  • 3 cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup brown sugar packed
  • 2 cups milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 medium apples peeled, cored and diced small
  • 1 cup pecans chopped

Instructions

  • Preheat the oven to 375°F and grease a 9×13-inch baking dish with cooking spray.
